Easy to make and perfect for hot days. Plus, this recipe is dairy-free and vegan, so everyone can enjoy this delicious ice cream treat! Popsicle molds are required for this recipe.
Matcha Coconut Chia Ice Cream Recipe
Ingredients:
For 4 people / 10 minutes without cooling time
400 ml coconut milk
1-2 tsp Sooperfood Matcha Power
2-3 tbsp chia seeds
1 tbsp agave syrup
1 teaspoon vanilla extract or ½ vanilla pod
3-4 mint leaves, chopped
Preparation:
- Combine all ingredients in a small mixing bowl. Mix with a whisk or a mixer on low speed.
- Now place the bowl in the refrigerator for 15 minutes to allow the chia seeds to thicken. In the meantime, you can prepare popsicle molds or a freezer-safe container.
- Now pour the mixture into your ice cream molds and place them in the freezer for a few hours, preferably overnight.
- To defrost, simply place it on the kitchen countertop. Enjoy!
